Roasted Broccoli & Ground Turkey Patties

Roasted Broccoli
2 bunches of broccoli
1/4 cup olive oil
3/4 tsp salt
1/2 tsp Southwestern Seasoning
1/4 tsp pepper


Preheat
oven to 350 degrees.

Trim broccoli. Place on a cookie sheet.

Toss broccoli with olive oil, salt, pepper and Southwestern Seasoning.

Bake in over for 30-45 minutes, tossing every 10 minutes.

Ground Turkey Patties
1 lb ground turkey
1/2 tsp salt
1/4 tsp pepper
1/4 tsp Southwestern Seasoning

Combine ground turkey, salt, pepper and southwestern seasoning in a bowl. Separate the meat mixture into two patties. Making sure to make the center thinner than the edges.

Heat the patties in a skillet over medium high heat until cooked through.


Bacon Cheeseburger Pasta

Ingredients

  • 8 ounces uncooked penne pasta
  • 1 pound ground beef
  • 6 bacon strips, diced
  • 1 can (10-3/4 ounces) condensed tomato soup, undiluted
  • 1 cup (4 ounces) shredded cheddar cheese
  • Barbecue sauce and prepared mustard, optional

Directions

  • Cook pasta according to package directions. Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain and set aside.
  • In the same skillet, cook bacon until crisp; remove with a slotted spoon to paper towels. Discard drippings. Drain pasta; add to the skillet. Stir in the soup, beef and bacon; heat through. Remove from the heat and sprinkle with cheese. Cover and let stand for 2-3 minutes or until the cheese is melted. Serve with barbecue sauce and mustard if desired. Yield: 4-6 servings.
Review:
This recipe was easy and quick to make. And the taste was spot on. It uses mostly ingredients that I keep on hand so it would be great to make in a pinch of company decided to stop by. It could easily be doubled or tripled for a larger size group or family. It can also be seasoned however you like to season the meat for your bacon cheeseburgers. The ingredient list is very short so you don't have to have a lot to prepare this meal. It was very yummy and we will definitely be making this again.

Mexican Lasagna

Mexican Lasagna

Original Recipe From Ortega Favorite Mexican Recipes

Prep Time: 10 Minutes---Start to finish: 25 minutes

Makes 4 servings

Ingredients:
1 pound ground turkey or lean ground beef
3/4 cup water
1 packet (1.25 ounces) taco seasoning mix
3/4 cup (3 ounces) shredded mozzarella cheese
1/3 cup nacho cheese sauce
4 (8-inch) soft flour tortillas
1/3 cup enchilada sauce

Preheat oven to 350 degrees F. Brown meat in medium skillet over medium heat. Drain excess fat and discard.

Stir in water and taco seasoning mix. Cook and stir until thickened. Remove from heat. Add one-half of mozzarella cheese and one-half of nacho cheese sauce to meat mixture; mix well.

Place 1 tortilla into ungreased 9-inch pie plate. Layer one-third of meat mixture on top. Spread one-quarter enchilada sauce onto meat layer. Repeat two more times. Spread remaining cheese, cheese sauce and enchilada sauce on top of lasagna.

Bake, uncovered, 15 minutes on center rack. Remove from over. Cut into wedges. Serve with desired toppings.
